Nacho Bowls... Layers of love
Nachos so deep that you'll need a spoon to eat them. The first time I made these it was a one pot meal sous vide which you can do, but it's easier in a pan.
So, let's get started.
1 onion, chopped
1 jalapeno
1lb ground beef 80/20
1 can refried beans
1 packet Mccormick's Taco seasoning
Toppings
Chopped onion
Cheddar
Avacado
Cilantro
Lime juice
Bag of nacho cheese doritos... oh yeah.
Sweat onion and jalapeno over medium heat. If you find this too spicy remove the jalapeno seeds and white parts next time.
Add ground beef and brown
Add taco seasoning and mix
Turn pot to lowest setting and add refried beans. Smoosh beans top with a lid and walk away.
Return 10 min later and mix. Then walk away for 20 more minutes.
Mix. If it's too dry add some chicken stock, if it's too wet cook with the top off for another 10min.
Layers; Nacho cheese doritos, meat/beans, cheese, onion. Tomatoes, nacho doritos, cheese, onion, tomatoes, avacado, cilantro (or guacamole if you have time), and some lime juice.
I like to use a decent size Tupperware, but the bigger the better. Some people like the 8" round ones, but I like a deeper bowl. I suppose it would depend how you like your layers. As with all my recipies I try to explain options along the way, giving you options instead of obligations.
