Burrata caprese salad

Mixing up the traditional caprese salad with burrata is delicious... I found the burrata holds the balsamic better and has a wonderful texture. For the uninitiated, a caprese salad consists of; tomato, basil, and mozzarella with an accompaniment of basalmic vinegar, salt and pepper.

Nacho Bowls... Layers of love

Nachos so deep that you'll need a spoon to eat them. The first time I made these it was a one pot meal sous vide which you can do, but it's easier in a pan. So, let's get started. 1 onion, chopped 1 jalapeno 1lb ground beef 80/20 1 can refried beans 1 packet Mccormick's Taco seasoning Toppings Chopped onion Cheddar Avacado Cilantro Lime juice Bag of nacho cheese doritos... oh yeah. Sweat onion and jalapeno over medium heat. If you find this too spicy remove the jalapeno seeds and white parts next time. Add ground beef and brown Add taco seasoning and mix Turn pot to lowest setting and add refried beans. Smoosh beans top with a lid and walk away. Return 10 min later and mix. Then walk away for 20 more minutes. Mix. If it's too dry add some chicken stock, if it's too wet cook with the top off for another 10min. Layers; Nacho cheese doritos, meat/beans, cheese, onion. Ligurian Focaccia - SFAH

Ligurian Focaccia SFAH? Salt, fat, acid, heat... haven't seen it? It's worth a watch as a giggly Samin takes you around the world to experience Salt, Fat, Acid and Heat.  So. In a nutshell this recipe is assemble, stir, wait. Plop, spread, wait. Bake. Eat. Super simple.  You can view her recipe here  ligurian-focaccia  with my assembly below.  Combine all wet ingredients.  Combine all dry ingredients.  Stir together until combined.  Cover with plastic wrap.  Idk. About 10min. Easy.  Wait 12-14 hours. You know, like whatever is convenient in that range. I start mine just before I go to bed for lunch the next day.  Dump out on to a well olive oiled half sheet pan. (Non stick is nice here, well oiled is like 3 tbls).  Stretch dough by grabbing underneath. Pasta Alla Gricia, 3 simple ingredients

Pasta Alla Gricia Take a close look... creamy right? Well, there is no butter or cream. In fact, in the photo there are only 3 ingredients. Per Serving 5 oz dry spaghetti  3 oz Peccorino  1-2 slices bacon (or guanciale if you have some) Salt and pepper to taste. Aside from grating the Peccorino I suppose its possible to make it one handed holding a baby, but it's much easier to plop your little one in a carrier. Total time about 15min. Place your spaghetti in a large flat bottom saute pan. Mine is just large enough to squeeze the noodles in stacked along the center line. (I have seen Alton Brown cut an inch off the end if they don't fit in your pan.) Then add 3 cups water (for 2 servings, if your doing more start with 4 cups). Yes, I know, the noodles aren't all covered with water) Yes, I understand this is not how you normally make pasta. Anyway. Homemade Dijon Mustard Occasionally the suggested youtube videos come out with something worthwhile. In this one Brad from Bon Appetit makes mustard,  Its alive! Brad makes mustard . It was so simple how could I not try it.  Ingredients  6 tbsp brown mustard seeds (grind) 5 tbsp yellow mustard seeds (grind) 1 tbsp yellow mustard powder 2 tbsp kosher salt 1/4 cup apple cider vinegar 1/4 cup white verjus Let me guess, you were fine until you got to verjus. The word verjus derives from the French term vert jus, literally "green juice," which refers to its source—the high-acid, low-sugar grapes that winemakers thin from the vines just when the crop is beginning to ripen. This early crop of unripe grapes is pressed, resulting in verjus. Not having verjus  I subbed that for $4 chardonnay I keep in the fridge for cooking and added a tsp of sugar.   In fact, I didnt have apple cider vinegar either so, I used distilled vinegar.  Mix together and let

Introducing the Fun Food Dad Blog

At the behest of my beautiful and hungry wife I'm starting this blog. Somehow becoming a parent and still creating delicious meals while managing a newborn baby is something worth writing about. Sure, occasionally I make boxes mac n cheese, but not without shallot, garlic, bacon, a splash of white wine, and double the amount of butter indicated on the package. Even quick food can be amazing. To the readers, I hope you find this inspirational, I hope it shows you what's possible with a little time (or alot) and I hope food brings your family as much happiness as it does mine.
